Shorter days, longer nights, colder temps – Ughhh! For most of us the days of sunset swims and scenic bike rides are long gone. I don’t know about you, but combined with juggling family, work and the onslaught of commotion brought forth by the hectic holiday season, I found my fitness routines have been laid to rest leaving me unmotivated to workout. Healthy Mexican Hot Chocolate Cupcakes Recipe

Happy HEALTHY Food Friday!! Mia Cupcake here…bringing you a spicy and non-butter-or-egg-filled chocolate cupcake recipe.

And it’s vegan.

I know what you’re thinking, but being the self-proclaimed Cupcake Queen, I have tried just about every single chocolate cupcake recipe I can lay my flour-covered hands on, and have fed most of them to my fiancé.

And this is hands down the best. It’s moist, tasty and does not taste like wheatgrass :)

Without further adieu, I give you Mexican Hot Chocolate Cupcakes, based on a recipe from Vegan Cupcakes Take Over the World by Isa Chandra Moskowitz & Terry Hope Romero.

Healthy Mexican Hot Chocolate Cupcakes Recipe

Healthy Mexican Hot Chocolate Cupcakes Recipe

Ingredients

  • 1 cup soy milk
  • 1 1/2 tsp apple cider vinegar
  • 3/4 cup granulated sugar (I use "vanilla sugar", but you don't have to)
  • 1/4 c canola oil
  • 1 1/2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup cocoa powder (I use Hershey's)
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cayenne pepper (this is not a typo)
  • 1 1/2 tsp cinnamon

Instructions

  1. Preheat oven to 350°F and lay out your cupcake liners into your cupcake pan.
  2. Whisk together soy milk & vinegar in a large bowl, and set aside for a few minutes to curdle. (this sounds gross, but this is the emulsifier...like eggs)
  3. Add sugar, oil, and vanilla to the soy milk mixture and whisk until foamy. In a separate bowl, sift together the flour, cocoa powder, baking soda, baking powder, and spices.
  4. Add dry ingredients to wet ingredients in 3 batches, whisking just until ingredients come together. Small lumps are ok!
  5. Pour into liners, filling 3/4 of the way. Bake 18 to 20 minutes, until tops are spongy.
  6. Transfer to a cooling rack and let cool completely before frosting.

Notes

These can be eaten plain with no frosting, or you can use a small dollop of fresh whipping cream with cinnamon dusted on top if you need a little something.

Confessions: Shame & Weight Gain During Pregnancy

The other day I was on twitter and someone random said something to me. It was kinda mean and it’s sad that the mean things tend to stick out in my head, but it did. This person said something to the effect of “with all the splurging you are doing pregnant, I bet you are gaining too much weight.” I didn’t respond to them AT ALL. I’ve learned that when I do respond to people like this, all of a sudden they gain more twitter followers. Not something I wanted to give them. So I sat on that for a couple of weeks and now want to talk about it.

Pregnancy is always hard for me. It’s not so much the physical part as it is the emotional part. After all that hard work and sacrifice, I HAVE to gain weight. To some people that doesn’t sound like such a big deal, but to someone who has come as far as I have and has an eating disorder, it feels like a HUGE set back. My last pregnancy, I gained about 60 lbs. Way more than the average person. Was I watching what I ate? Yes. Was I exercising? Well, I was taking Tae Bo and boot camp classes up until 2 weeks before delivery. So yes, I was. (As a matter of fact, I was doing better than some of the people in there that weren’t pregnant.) And then I wonder to myself how much I would have gained had I not done those things. I’m scared of that answer. So why all the weight gain? I really have no idea. The only thing that makes sense to me is my body is desperately trying to put back what was lost to give to the baby somehow. I have NO other explanation than that. I’m sure someone who knows a great deal about metabolism and major weight loss can give you a better explanation.

As to this pregnancy, It’s been different than the last one. I’ve been far more depleted: sick, tired, nauseous, feeling overwhelmed, and emotionally drained. I haven’t exercised as much and yet I haven’t gained as much. And I’ve actually been far more hungry, so I’m eating more. I’m halfway through and have already gained almost 20 lbs. To me that’s a HUGE improvement from last time. Yes, that’s more than the average again, but I think my metabolism is getting better. Ironically, I still have some major stamina when I do workout. In fact, I’ve been taking classes with Billy Blanks every Tuesday night and I’ve been doing just fine. In fact, I’m finishing stronger than most of the women there. How? I have NO idea. I should be exhausted, but I think all the high intensity stuff I did BEFORE I got pregnant may have something to do with it.

Enter the mind of someone with an eating disorder. Any weight gain is too much weight gain. We are really tough on ourselves. We tend to have a black and white interpretation of things. I’m fat and therefore I’m bad and I’m just going to sit here and drown my sorrows in this tub of ice cream. Does that make any sense? No. Are people with eating disorders highly intelligent people? Mostly, yes. It doesn’t matter how big I am. The only thing I see is how I weigh more than what I did X months ago. So here is my own personal struggle. Everyday I feel some sort of guilt and shame about my weight gain. My own personal challenge is putting it all into perspective even though my eating disorder tells me I’m a failure. The craziness about it all is I’m NOT a failure. Look at how far I’ve come and it’s not like I can’t lose all the weight again after the baby is born.

I share this all with you because I know there are people reading this who also struggle with eating disorders or emotional eating. I’m not comfortable being your leader and making you think that I have conquered it all. I don’t think that helps people because then you all have a false sense of reality. “If I can just lose XX amount of weight, my life will be perfect and I’ll have gotten over all this”…not true. When you lose all that weight, you will still struggle emotionally every day. I do. If you have gained ANY weight over the holidays, you may feel just like me–guilt and shame over it and kicking yourself from all the hard work you have done that you just erased. So if you feel this way, don’t think for a second that I don’t understand how you feel. And don’t hide ashamed from me. I’m revealing myself here with open honesty. Don’t be afraid to do the same. Trust me, I have more to lose here.

Some places online will make you feel ashamed when you have lost your way. This is not one of those places. I say…SO F*CKING WHAT? You are here now and that is all that matters. The most important lesson I’ve learned from all this over years and years is the ones who get back up (even though they feel lower than low) are the ones who get what they want. Who cares that you had bad month or bad year of a bad couple of years. That is all in the past. We have the here and now to deal with. And today, I want you to stand WITH me–Proud, imperfect and strong because we have each other. I have you and you have me. We are badass.

Healthy Frozen Peppermint Hot Chocolate Recipe

The holidays are upon us!

Whether you are craving sweet treats or decadent family favorites it is hard to just say no. This week I am offering a delicious recipe that won’t leave you feeling deprived. You might have seen frozen hot chocolate recipes that call for heavy cream and lots of sugar. This recipe is not only simple to make, it is dairy free (for my lactose intolerant friends) and you can adjust the sweetener of your choosing. Okay, it is not calorie free, but I also love that it costs a fraction of what coconut milk ice cream does in the health food section. Make it and pull it out of the freezer when you really have a chocolate craving.

I love how easy and versatile this is to make. You can decide how much sweetener and what type you prefer. We use honey because my children can’t have any artificial sweeteners. You can also add different natural flavorings to make it your own. This recipe doesn’t require an ice cream maker, but you certainly can use it if you have one. Just put the mixture in your ice cream maker in step 3 and follow your machine’s instructions.

Healthy Frozen Peppermint Hot Chocolate Recipe

Ingredients

  • 1 c. lite coconut milk
  • 2 tbsp. unsweetened cocoa powder
  • a pinch of salt
  • 1/2 tsp. sweetener of your choice (honey, stevia, maple syrup, etc.)
  • 1/4 tsp. natural peppermint extract*

  • Topping (optional):
  • Whipped topping of choice
  • A pinch of mini chocolate chip morsels for garnish

Instructions

  1. Combine the coconut milk, cocoa, salt and sweetener in a microwave safe bowl. Heat it for 30 seconds in the microwave, whisk and repeat. Once combined, stir in the peppermint extract.
  2. Pour the liquid into an ice cube tray and freeze.
  3. Once frozen, pop the cubes into a blender (a Vitamix or Blendtec work well here). Do not dilute your mixture with ice, but you may need another drizzle of coconut milk to keep the mixture from freezing up on the sides.
  4. Spoon into two bowls and serve as is, or top with whipped topping (check your health food section for natural options) and a pinch of mini chocolate morsels.

Top 10 Most Influential Females in Fitness for 2011

This year has seen lots of excitement with health and fitness. I’m excited about how this year has changed our country in terms of respecting the importance of health. We’ve come a long way and have a long way to go, but we are making a dent. Since it’s the end of the year, it’s time to recognize women who have contributed heavily to the important of health & fitness in social media.They are badass. *my favorite word* Period.

Here are the Top 10 Most Influential Females in Fitness for 2011. Btw, I’m NOT including celebrities…what’s the point? (Not in order of importance)…

1. @KellyOlexa. This year Kelly started up a blogging network called Fitfluencial and so far it’s worked to organize our blogging niche. We were never organized before. She saw the opportunity and jumped on it. That’s brilliance and those type of women always do well because they aren’t afraid of hard work and “hanging ur balls out there.”

2. @Fitbottomedgirl. Always a favorite of social media and especially on Facebook a force to be reckoned with. They’re badass. Enough said.

3. @ReneeJRoss. In the past couple of years, Renee went from mom blogging and crossed over to fitness blogging. She lost over 50 lbs. and is an inspiration to mom bloggers. She’s constantly working with brands and is someone I’ve admired for a long time.

4. @LisaJohnson. Lisa is the kind of person who has an opinion and will share it without fear. I respect that about her. She’s also the #1 Pilates instructor on twitter and ALSO has gyms of her own. So not only does she work as a professional blogger, but she’s also a business owner outside of the space. That’s a true accomplishment. She’s kinda like Superwoman.

5. @Mizfitonline. Carla has a loyal audience and writes about all things from fitness and nutrition to products and her daughter. She was once a body builder and if you like the non-conventional, you’ll like her.

6. @JoyceCherrier. How can you forget Joyce? Joyce has a unique audience that combines true social media addicts, marketers, the hard core fitness crowd and mom bloggers and somehow she has become relevant to them all. A task not easy. Trust me.

7. @RoniNoone. Roni organizes the FitBloggin conference every year in Baltimore, Maryland. It’s now the largest fitness blogging conference out there and she deserves our mad respect for providing a place where we can get together every year.

8. @CarrotsNCake. Tina has a fabulous following of young women and her blog consists of yummy recipes, workouts, posts about her life, and any other such thing that catches her fancy. Plus, she’s just really nice.

9. @Skinnyjeans. You can’t have a list without Stephanie on it. She’s not so much a blogger anymore as she is heading into the iPhone app industry, BUT she’s still rocks it and paved the way for most fitness bloggers. And for that she will always deserve our respect.

10. @Bookieboo. Yeah, that’s me and I WAS egotistical enough to put myself on my own list. But I thought about it and decided that I deserved a spot with the rest of the badass women here. Yadda yadda yadda, I’m the creator of the Mamavation community.

Two Week Challenge Campaign 4 Wrap-Up

Top 10 Things I’ve Accomplished *pats on back*

I’ve lost over 100 lbs….yadda yadda yadda…but over the course of doing that, I learned how important it is to pat yourself on the back for things that you have done right. And because it’s the end of the year, I’ve decided to do just that to remind myself of how far I have come in life. Here are my top 10 accomplishments so far…

1. Birthing 2 beautiful babies and breastfeeding them both. Especially the breastfeeding part because it didn’t come easy to me. In fact, there were several times I almost gave up from the pain, exhaustion, infections, lack of understanding what the hell to do, etc. I actually think that breastfeeding my first child was HARDER than losing over 100 lbs. and I’m not even joking. For this I’m very proud of myself for sticking with something even when I thought I was a failure. Not easy to do.

2. Having enough sense to marry a “nice guy.” Yeah, you heard me right. My past relationships were full of not so nice guys. In fact, because of my record my own mother said to me when I started dating Mark…”Leah, this one is a keeper. Don’t f*ck this up….” No joke. And she meant it with as much love as she could muster, but it was the truth because she knew me. Back then I could be my own worst enemy.

3. Losing over 100 lbs. in spite of the fact that I have an eating disorder. This was a feat that was so difficult, I still shake my head in amazement. BUT it’s also a feat that gives me hope and gives other people hope and for that it deserves to be in the top 10 every year. Oh, yeah…and it makes me badass.

4. Creating the Mamavation community. Being able to create a community where women are non-judgemental, loving and supportive, understanding, REAL, and effective is just an amazing blessing. I pinch myself everyday that I’ve turned my anti-sorority bullshit stance from college into a sorority that feels open and loving. Has this actually happened? I’m still stunned. I also have the honor to help women take control of their lives like I did. The satisfaction I get from helping so many is indescribable.

5. Graduating top of my class at USC and speaking at graduation. Not everyone knows this about me and I don’t broadcast it all time but I did and I’m proud of it. When I graduated from the Annenberg School at the University of Southern California I spoke at graduation in front of about 700 people. Getting straight As was very difficult for me. I had to study more than my peers, but I think because of that I’m very accustomed to hard work. I don’t shy away from challenges. I own them. Because of my accomplishments, the University of Southern California invited me back to get my Masters. I worked for them and received free tuition in exchange. So yeah, I’m kinda smart too.

6. Turning my hobby into a successful business.  This “blogging thing” started off as a hobby over 5 years ago. I needed to do something that tickled my brain a bit and proved to my mother that I wasn’t wasting my Masters degree. I think my start up costs were under $100 the first month. It was worth every penny. Where else but in social media can you create something out of nothing? All you need is a really good idea and the dedication to work your ass off. Today I get paid to do what I like to do and make my own hours…and work in my underwear if I want.

7. Seen and been to a lot of cool places, i.e. traveled the world. I’ve lived outside of the United States in London and China and I’ve traveled all over Europe. Having those experiences have really pushed my boundaries with what I’m comfortable with and what I can withstand on a daily basis. What I mean is, you can handle more than you think you can. Living in other countries truly tests your ability to change and adapt while staying strong inside. I also feel like these experiences have made me very tolerant of others. I’m mostly a non-judgemental person for two reasons: (1) because I’m not Mother Theresa and (2) because I’ve seen and experienced lot of things in other cultures that would be very odd here. The world is a bigger place than our little sandboxes.

8. Caring for my father as he was dying. This is a hard one for me to think about in terms of accomplishments, but it’s important because it built character. When my father was dying of cancer, I was pregnant with my first child and I was caring for him. I watched my father go from the strongest person in my life to the weakest person in my life. And I was helpless to stop it. Caring for my father as he was dying helped me to accept things, appreciate things, and find the light at the end of the tunnel. I would not be the person I am today without this experience.

9. Getting lots of praise for my accomplishments. Holy shit have I been written about. I know what I’ve done is pretty badass, but when other people agree with you, it really feels good.

10. Getting to be myself without too much censorship, and getting away with it. Okay, this sounds funny, but it’s huge for me. It’s emotionally painful for me to pretend to be be something I’m not. In fact, times in my life where I had to do that have taken a big emotional toll on my psyche. I have to be me. I don’t apologize for who I am. I’m spunky, eccentric, very TMI, random, caring….and a lot of fun. Having children and losing weight gave me enough personal strength to say “the hell with it” and just be myself. And I love social media because this is the medium where the eccentric are celebrated. I fit right in. :)

Mamavation Monday: Slumber Party

What kind sorority would we be without a slumber party? And since we can’t physically get together in the same room – the second best option is to show up in pajamas to the Mamavation TV show.

It’s hard to believe this year is almost over. 2011 was an eventful year for our community – we lost a lot of pounds together and participated in numerous campaigns. Mamavation Mom bootcamps  show great results every single time. The numbers are impressive and results are real! However, Mamavation community is so much more than Mamavation Mom campaigns. There are great challenges, recepies, twitter parties, giveaways and more.

I have  lost 35 lbs with Mamavation community and went from size 16 to size 12. It took some time and several different challenges, but I would not be able to do it without the Sistahood. It is a great thing to know, that your weight is no longer your personal problem – we can tackle it one pound at a time as a community!

What is your biggest achievement of the year?

Healthy Parmesan Chicken

Chicken Parmesan typically involves some breading, a little frying, and lots of cheese. But it’s oh-so-good, right? Would you believe me if I told you that you could still enjoy this comfort food, and that it would actually be healthy for you? It’s true! This recipe holds all of the flavor of the original, plus even more because of the fresh herbs. Serve it over a moderate portion of whole wheat pasta, stick a salad on the side, and you have yourself a healthy dinner.

Healthy Parmesan Chicken

Ingredients

  • 2 tsp. olive oil
  • 1 Tbsp. each of fresh rosemary, thyme, and parsley, chopped
  • ½ tsp. each salt & pepper
  • 1 lb. package chicken tenderloins (could also cut chicken breasts into strips)
  • 2 cups tomato sauce (make sure to get a good brand with minimal ingredients, or make your own)
  • ½ cup shredded mozzarella cheese
  • 2 Tbsp. freshly grated parmesan cheese

Instructions

  1. Preheat oven to 450 degrees. Heat large oven-proof skillet over medium-high heat. Brush one side of cutlets with olive oil, sprinkle with half the salt and pepper and half the fresh herbs.
  2. Place herb-side down into the pan and cook for 2-3 minutes until browned.
  3. Brush top side with olive oil and sprinkle with remaining salt, pepper, and herbs. Flip and cook for 2-3 minutes more until both sides are browned.
  4. Remove pan from heat and let cool for 2 minutes. Grab your tomato sauce and pour over and around chicken.
  5. Top with cheese and slide pan into oven. Bake until cheese melts, about 5 minutes.

OR I’d get so much Vitamin D that I might overdose and start growing extra toes out of my forehead. Or something like that. That wouldn’t be attractive, but at least I could join the circus.

How does the circus, toes out of my forehead, armed militia with plumbers cracks and privacy all connect? Full disclosure for my buddies at the FCC: The dudes at MyInforGuardian.com bought me lunch. It was in Beverly Hills…it was on nice china. They also paid for my valet and gave me a LIFETIME subscription to their site. So to be honest, I have NO idea how much it all cost.I’m sure you could add a couple of zeros and I’d just nod my head.  I was there with about 20 other mom bloggers and we enjoyed every last bite of Chinese food and then gave Myinfoguardian.com all our personal information so they could “protect us” too. Sooooo, basically I’m not getting paid for this one. I’m doing this for my friend Jessica Gottlieb. And I’m hoping no one took a picture of me eating some chocolate cake at the end. Give me a break…I’m pregnant…I think I might get in more trouble for that one because we are doing this 2 week challenge thingie…shit…cat is OUT of the bag because of my own big mouth. Ahhh, well…

And another thing. I asked Jessica Gottlieb what to wear to this because IT WAS in Beverly Hills and she told me to be comfortable. Well, when people tell me to be comfortable I basically interpret that as “be naked”….so I thought that Jessica Gottlieb was trying to get me naked at this event. And then I thought to myself…why would she want me there naked?…and then it dawned on me…she ALSO works for PETA…she must…they like nudity too! So I decided to wear fur to the event instead just to piss off the PETA people that were going to be hiding with cameras in the corners. I was also hoping they didn’t have a bucket of paint to pour on me while I was eating my chocolate cake vegetables. I didn’t have a fur coat…but I DID have a rabbit scarf. So there!  I shared this info with my friend Heather Spohr and she humored me by laughing. Yes, I actually think like this. Some call it crazy…I call it eccentric brilliance. And if you smiled, I win!
