Combat the mid, to late afternoon energy crash with these easy to make protein energy bites. These get a thumbs up from the kids and taste delish! The add-in options are endless, you can substitute, add, our omit ingredients as you wish!
Ingredients
- 1 cup (dry) oatmeal (I used old-fashioned oats)
- 1 cup coconut flakes
- 1/2 cup organic peanut butter
- 1/2 cup ground flaxseed or wheat germ
- 1/2 cup chocolate chips (optional. I used mini chips)
- 1/3 cup honey
- 1 scoop vanilla protein powder
- 1 tsp. vanilla
Instructions
- In a mixing bowl, stir all ingredients together.

- Place bowl in the refrigerator and chill for half an hour.
- Once chilled, use a spoon and scoop into balls of whatever size you would like. (Mine were about 1 in diameter.)

- Store in an airtight container and keep refrigerated for up to 1 week.

OMG! this doesnt have wheat and it has all my most favorite items like oats, flax seeds (omega 3) and honey. I was so looking for a recipe like this to support my new lifestyle of making things at home for snacking 5 snacks a day instead of big 3 meals. wow looks so yummy!
