There is no breakfast more classic than pancakes, maple syrup, and bacon, all made with love. So why not put all of this together to create Organic Maple Bacon Pancake Hearts? I created this recipe out of necessity really. My son is all about the carbs and we have to get sneaky to get him to eat protein. Hiding the bacon in the pancakes and making them a fun shape did the trick. It also makes a nice portable breakfast when we need to hurry off somewhere. These aren’t just for kids, though. The smoky organic bacon with a sweetness from the organic maple syrup is just what you want with these fluffy organic whole wheat pancakes.
Pancakes are a regular breakfast here, they’re actually my favorite breakfast to make. I developed this egg and dairy free version when my son was young because he had food sensitivities. However, it’s simple to add in any type of milk you’d like, just replace the water. Adding the bacon was just a bonus — as I mentioned earlier in the week, I found organic bacon on sale. The rest of the ingredients for the maple bacon pancake hearts are pretty much pantry staples, so you can make this on a whim on any morning. This recipe came out to $7.32, which is only $1.83 per person.

I did not include salt because it worked out to less than a penny in cost.
