I think macaroni cheese is probably the universal kid’s food. No matter what cuisine a restaurant serves, there is usually a mac and cheese on the kid’s menu. The grocery store aisles are lined with an array of brands, flavors, shapes, and even colors of the kid friendly food. It’s even been the subject of petitions and news stories, with many people trying to remove harmful ingredients. Even with it’s popularity and the removal of artificial dyes in some brands, it’s still not the healthiest meal. That’s why I made a healthy mac and cheese, Organic Quinoa Macaroni Cheese.
For my healthy mac and cheese, I swapped out the high-carb pasta for a organic quinoa version. If you aren’t familiar with this ancient grain, it’s an excellent source of protein, fiber, magnesium, and B2. In fact, it’s toted as “one of the most protein-rich foods we can eat. It is a complete protein containing all nine essential amino acids” in an article by Forbes. This super grain can reduce the risk of obesity, type 2 diabetes, cardiovascular disease, high blood pressure, and colon cancer. (via Medical News Today).
Hiding quinoa in healthy mac and cheese great way to get your kids to eat healthy whole grains with no complaints. Plus, by using organic milk, cheese, and other organic ingredients you are ensuring their are no GMOs or chemical pesticides in their lunch.
