A grilled cheese is a simple go-to for lunch that makes everyone happy. It makes me even happier when I add in something healthy and find a new favorite sandwich. Organic Spinach Stuffed Grilled Cheese was born from my boredom with a plain grilled cheese and my love of organic spinach. I was hungry and needed something fast and filling, and man did it hit the spot. Organic chia bread is crisped up in browned butter. In between is melted organic cheese, warm organic spinach, and organic onion for even more depth of flavor.
The budget saving tip for this recipes was stuffing the grilled cheese with vegetables. Organic veggies are a less expensive filler than meat. I purchased the organic spinach frozen, which adds another cost savings. I was able to keep the cost of this sandwich even lower by using a coupon for the cheese too.
