There is a corner diner right down the street from my house that has all of the traditional American diner menu items, and a drive through. It’s always packed at breakfast, lunch, and dinner. There is just something about that food that people are always craving. It inspired this week’s menu, but of course made organic and healthier than what the restaurant offers. Here are my three diner-inspired meals for under $25!
I made a whole organic chicken last week, and I had leftovers. I used the organic chicken, red onion, and yogurt in another dish to make sure I didn’t have any going to waste. There is no sense in saving money on groceries if you’re only going to throw it away. As usual, I browsed the ads to see what other organic items were on sale. I found raspberries, lettuce, avocado, and a few other things that all seemed to work together to make diner-inspired meals. It all tallied up to $24.95, just under my budget. Here is what I created.
